Ingredients
Pickled Veggies:
🥒 Spiralized Peruvian cucumbers
🥒 Sliced carrots
🥒 3 cloves garlic, minced
🥒 Fresh cilantro, chopped
🥒 Poblano green chili pepper, thinly sliced

🥒 1/4 cup rice vinegar
🥒 1/4 cup sugar
🥒 2 cups hot water
Marinated Chicken/Tofu:
🍗 1 1/2 lb raw cubed chicken, or tofu sliced long ways
🍗 3 cloves of garlic, minced
🍗 1 tbsp sesame oil
🍗 1 tbsp hoisin sauce
🍗 1 tbsp honey or maple syrup
Probiotic Chili Sauce:
🌶️ 2 tbsp Alive Ferments Mild Red
🌶️ 1 tbsp honey
Additional Ingredients:
🥖 1 French baguette
🥄 1/4 cup mayo
Instructions
- Pickled Veggies:
- In a bowl, combine the rice vinegar, sugar, and hot water. Stir until the sugar is fully dissolved.
- In a jar, layer the spiralized cucumbers, sliced carrots, minced garlic, cilantro, and poblano chili. Pour the brine over the veggies, making sure they’re fully submerged. Add Alive Ferments Mild Red for an extra probiotic kick. Seal the jar and let it sit in the refrigerator for at least an hour, but overnight is best for deeper flavor.
- Protein Prep:
- In a bowl, combine the garlic, sesame oil, hoisin sauce, and honey. Add the cubed chicken or sliced tofu, making sure each piece is well-coated. Cover and refrigerate for at least 30 minutes to marinate.
